Thermal inactivation of Yersinia enterocolitica in milk.
Three strains of Yersinia enterocolitica isolated from milk had D values at 62.8 degrees C from 0.24 to 0.96 min and z values of 5.11 to 5.78 degrees C. Since the pasteurization processes for dairy products recommended by the Food and Drug Administration are adequate to destroy large concentrations of these organisms, Y. enterocolitica in pasteurized milk probably results from substandard proce...
متن کاملInactivation of Yersinia enterocolitica in Fermented Sausages during Fermentation
The purpose of this study was to evaluate the storage conditions as a way to increase the safety of fermented sausage, with the specific objectives to investigate the effect of storage time, pH value, water activity and microbiological status (Lactobacillus spp. and Enterobacteriaceae) on the levels of Yersinia enterocolitica in fermented sausages. For this experiment, meat was divided into fou...
متن کاملSepsis and empyema caused by Yersinia enterocolitica.
Yersinia enterocolitica is the cause of gastrointestinal infection in the overwhelming majority of recognized cases, although extraintestinal sites are occasionally involved. We report a case of Y. enterocolitica septicemia and empyema complicated by the adult respiratory distress syndrome. The organism was also recovered from the patient's feces by alkaline enrichment and persisted through at ...
متن کاملModelling inactivation of Staphylococcus aureus and Yersinia enterocolitica by high-pressure homogenisation at different temperatures.
A detailed study of the inactivation of Staphylococcus aureus and Yersinia enterocolitica by high-pressure homogenisation was performed at, respectively, 25 and 35 different combinations of process temperature and process pressure covering a range of 5-50 degrees C and 100-300 MPa. It appeared that in the entire studied pressure-temperature domain, S. aureus was more resistant to high-pressure ...
متن کاملPyomyositis caused by Yersinia enterocolitica.
Yersinia enterocolitica is known to be associated with gastroenteritis in children and Reiter's syndrome in adults, but it has only rarely been the cause of primary soft tissue infections. A patient with diabetes mellitus developed a calf abscess, from which Y. enterocolitica was isolated in pure culture. Incision, drainage, and intravenous gentamicin therapy resulted in cure.
